Chicken Pastina Soup
Directions:

Cooking the Chicken:

In a large pot, heat a bit of olive oil over medium heat.

Add the diced chicken breast and cook until browned on all sides.

Sauté Vegetables:

Add the diced carrots, onions, and celery to the pot.

Sauté until the vegetables are softened.

Add Italian Seasoning:

Sprinkle the Italian seasoning over the vegetables and chicken. Stir well to combine.

Tomato Paste:

Add the tomato paste to the pot and stir, allowing it to cook for a minute to enhance the flavor.

Pour in Chicken Broth:

Pour in the 8 cups of chicken broth, stirring to combine all the ingredients.

Bring to a Simmer:

Bring the soup to a simmer over medium heat. Allow it to simmer for about 10-15 minutes to let the flavors meld.

Cook Pastina:

Add the star-shaped pastina to the simmering soup. Cook according to the package instructions, usually around 7-10 minutes, or until the pasta is al dente.

Season the soup with salt and pepper to taste. Adjust the seasoning as needed.

Shred Chicken:

Once the pastina is cooked, remove the chicken breast from the soup and shred it using two forks. Return the shredded chicken to the pot.
