Chicken Pastina Soup

Directions:
  1. Cooking the Chicken:

    • In a large pot, heat a bit of olive oil over medium heat.

    • Add the diced chicken breast and cook until browned on all sides.

  2. Sauté Vegetables:

    • Add the diced carrots, onions, and celery to the pot.

    • Sauté until the vegetables are softened.

  3. Add Italian Seasoning:

    • Sprinkle the Italian seasoning over the vegetables and chicken. Stir well to combine.

  4. Tomato Paste:

    • Add the tomato paste to the pot and stir, allowing it to cook for a minute to enhance the flavor.

  5. Pour in Chicken Broth:

    • Pour in the 8 cups of chicken broth, stirring to combine all the ingredients.

  6. Bring to a Simmer:

    • Bring the soup to a simmer over medium heat. Allow it to simmer for about 10-15 minutes to let the flavors meld.

  7. Cook Pastina:

    • Add the star-shaped pastina to the simmering soup. Cook according to the package instructions, usually around 7-10 minutes, or until the pasta is al dente.

  8. Season to Taste:

    • Season the soup with salt and pepper to taste. Adjust the seasoning as needed.

  9. Shred Chicken:

    • Once the pastina is cooked, remove the chicken breast from the soup and shred it using two forks. Return the shredded chicken to the pot.

  10. Serve:

    • Ladle the hot soup into bowls and serve immediately. Optionally, garnish with fresh parsley or grated Parmesan cheese.

  • 8 cups chicken broth

  • 1 boneless, skinless chicken breast

  • 1 cup carrots, diced

  • 1 cup onion, diced

  • 1 cup celery, diced

  • 3 cloves of garlic

  • 1 tablespoon Italian seasoning

  • 2 tablespoons tomato paste

  • 1/2 cup star-shaped pastina

  • Salt and pepper, to taste

  • Olive oil (for sautéing)
