Chicken Caesar Salad

Directions:

  • Season chicken breasts with salt and black pepper.

  • Heat olive oil in a skillet over medium-high heat.

  • Add chicken breasts to the skillet and sear for 3-4 minutes on each side until golden brown and cooked through to 165°

  • While the chicken is cooking, whisk together all the Caesar dressing ingredients in a bowl.

  • In a large salad bowl, combine chopped romaine lettuce, cherry tomatoes, croutons, and Parmesan cheese.

  • Slice the cooked chicken and place it on top of the salad.

  • Drizzle Caesar dressing over the salad and toss until well coated.

  • Serve immediately, garnishing with additional Parmesan cheese and croutons if desired.

​Ingredients:​

  • For the Salad:

    • 2 boneless, skinless chicken breasts

    • Garlic salt and black pepper, to taste

    • 1 tablespoon olive oil

    • 1 head of romaine lettuce, washed and chopped

    • 1 cup cherry tomatoes, halved

    • 1/2 cup croutons

    • 1/4 cup grated Parmesan cheese

  • For the Caesar Dressing:

    • 1/2 cup mayonnaise

    • 2 tablespoons grated Parmesan cheese

    • 1 tablespoon Dijon mustard

    • 2 cloves garlic, minced

    • 2 tablespoons fresh lemon juice

    • 1 teaspoon Worcestershire sauce

    • Salt and black pepper, to taste

  • Store-bought caesar dressing works also
