Chicken Caesar Salad

Directions:

Season chicken breasts with salt and black pepper.

Heat olive oil in a skillet over medium-high heat.

Add chicken breasts to the skillet and sear for 3-4 minutes on each side until golden brown and cooked through to 165°
-
While the chicken is cooking, whisk together all the Caesar dressing ingredients in a bowl.

In a large salad bowl, combine chopped romaine lettuce, cherry tomatoes, croutons, and Parmesan cheese.

Slice the cooked chicken and place it on top of the salad.

Drizzle Caesar dressing over the salad and toss until well coated.

Serve immediately, garnishing with additional Parmesan cheese and croutons if desired.

1 tablespoon olive oil

1 head of romaine lettuce, washed and chopped

1 cup cherry tomatoes, halved

1/2 cup croutons

1/4 cup grated Parmesan cheese

For the Caesar Dressing:

1/2 cup mayonnaise
-
2 tablespoons grated Parmesan cheese

1 tablespoon Dijon mustard
-
2 cloves garlic, minced
-
2 tablespoons fresh lemon juice
-
1 teaspoon Worcestershire sauce

Salt and black pepper, to taste
